I’ve found myself in quite the predicament. My freezer is full of pumpkin, about 60lbs to be exact. You see, last October I bought about a 100 pound pumpkin, cooked it, pureed, and froze the vast majority of it. While I’ve been pretty diligent in using it various recipes I’ve barely making a dent. So, be prepared to see a lot of pumpkin recipes.
With that said my latest attempt to use up my endless supply of pumpkin was a delicious dessert I found on Allrecipes.com.

Overall this was a very easy recipe and the cheesecake came out great. However, when I make it next I will increase the crust mixture and double the cheesecake amount. While the cheesecake was great tasting it was a little thin for my liking.
